Lettuce (Lactuca Sativa)

Lettuce Lettuce is a cool season annual that is fun and easy to grow. It was first cultivated by the ancient Egyptians and spread to the Greeks and Romans.  There are several different types of lettuce.  Leaf lettuce produces crisp leaves loosely arranged on the stalk. Green leaf, Red leaf and Simpson are popular  varieties.  Great in salad or on sandwiches.

Romaine also known as Cos, forms an elongated upright head.  It has large leaves stiffer than most. It is more heat tolerant than other lettuce varieties.  Excellent alternative to bread for a sandwich wrap.

Butterhead varieties have small round loosely formed heads with soft buttery texture and delicate sweet flavor.

Bibb and Buttercrunch are great. Lettuce will grow in full sun to partial sun in well drained soil.  It will mature from seed in 40-60 days depending on the variety. Six to eight lettuce plants can grow in a 16″ pot.  Enjoy at home or give the gift of salad.

Warm Asian Chicken Wrap

3 or 4 chicken breasts cut in small pieces
2T oil (Canola or your choice)
1/2 red bell pepper chopped
6 to 8 mushrooms chopped
small can water chestnuts diced
1T fresh grated ginger root (peeled)
Clove or 2 of garlic mashed & chopped
Red pepper flakes to taste (pinch)
Splash Tamari (reduced sodium)
Splash Teriyaki
Splash Rice Vinegar
Lettuce for bowl or wrap. Boston, Bibb or Romaine
Cracked Pepper & Sea Salt

Saute chicken in oil 2-3 minutes.  Add remaining ingredients (except lettuce) and sauté 5 minutes or until done.  Put a scoop of chicken mixture in each lettuce bowl or leaf.

Cold add ons can be almonds or walnuts, green onions chopped or carrots shredded.  Enjoy!
Cool Asian Chicken Salad Bowl
Rotisserie Chicken, meat shredded
1/2c Helman’s or any true mayonnaise
Squeeze of spicy mustard, Brown or Dijon
Squeeze of Asian Chile Sauce
Small can of water chestnuts chopped
1tsp freshly grated peeled ginger
1 chopped green onion
2 to 3T fresh chopped Cilantro or Mint
Bibb, Boston or Iceberg Lettuce for bowl
Sea Salt & Cracked Pepper
Combine all ingredients in bowl and mix.  Put a scoop of chicken mixture in lettuce bowl.
Cold add ons may be chopped Avocado, Mango, Bean Sprouts or Jalapeños.  A squeeze of lime is nice.  Be good to your food.  It will be good to you.
