Malabar Spinach

Malabar spinach is not actually a spinach but is an eatable vegetable that probably originated in tropical Asia. The flavor somewhat resembles spinach, hence the name. It can be used in soups as a thickener, or in salads, stir fry, or cooked like greens. In our area it is a summer crop and the vines can reach 10′ to 20′ or more. Malabar spinach is high in vitamin C, A, B6, Iron, Calcium, and fiber. The tips 8-10″ and end  leaves are harvested over and over through the growing season. Heavy rains do not bother it and few pests seem to like it. Grow it in the full sun in well-draining soils that are high in organic matter. It’s a fun addition to the garden.
