It is the perfect time to plant Lettuce either in seed form or four inch potted plants.  Lettuce prefers the cooler weather.  Stagger the plantings to extend the growing season.  Many varieties grow well here.  We have Red Sails, Romain and Black Seeded Simpson in pots.  There are seed options for any palate.  Buttercrunch has a buttery flavor with tender leaves. It can easily be grown in a container with moist soil.  Lettuce prefers mild weather with consistent moisture.  The Heirloom Romaine Lettuce, Jericho, most commonly used in Caesar Salads, have full heads with sword shaped leaves which have a juicy crunch.  Mesclun Lettuces are also an excellent choice. Gourmet Baby Greens and Five Variety Blend are both Mesclun mixes. They are gourmet blends with beautiful colors, a rich balance of flavors and diverse textures.  Most blends of Lettuces can be cut with scissors as needed. Cut the leaves one to two inches above the soil and the plant will continue to grow weather permitting.  Colorful Lettuce Blends are not only tasty, but a beautiful blend of colors and textures for your garden.  
 
Most Leaf Lettuces make an excellent alternative to bread or tortillas. When trying to cut down on calories or avoid Gluten, make a Lettuce Wrap.  Lettuce provides fiber along with Vitamin A and C, Potassium and Calcium. It is thought to be an antioxidant. We all should eat more Lettuce.

Chicken and Red Leaf Lettuce Wraps :
 
Organic Rotisserie Chicken, meat removed and shredded. We prefer the breast meat for this recipe.
Organic Red Leaf Lettuce, leaves separated and spread out on a towel to dry.
Pico de Gallo (One Tomato chopped, quarter of white Onion chopped, small fresh Jalapeño   chopped, seeds and membrane removed, small palmful of Cilantro chopped with stems, and squeeze of lime)

      
Organic Alfalfa Sprouts
Organic Cilantro chopped with stems
3 or 4 Organic Pineapple slices crushed
 
Make an assembly line. Choose Lettuce, add some Chicken, add some Pico, add some Sprouts, add some Pineapple and top with some Cilantro.  Roll up Lettuce and eat.  Or, omit the Chicken and add Avocado slices and Cucumber bits (peeled and chopped) for a Vegetarian Wrap. Play with your food… It is fun to eat green!
